Eileen McGondel's Banana Nut Bread
(As published in cookbook: "More of a Good Thing" - Friends Of The Mary E. Bartlett Library-2003).

Ingredients:
1 3/4 cup sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1/3 cup shortening
2 beaten eggs
1 cup mashed bananas
1/2 cup walnuts (crushed)
1/2 tsp. salt
2/3 cup sugar.

Directions: Sift dry ingredients together, set aside. Work shortening against bowl till creamy, Add sugar gradually while continuing to beat till light and fluffy. Add eggs and beat well. Add flour mixture and mashed bananas alternately, a small amount at a time. Add nuts, mix thoroughly. Pour into bread pan which is lightly buttered. Sprinkle crushed walnuts on top if desired. Bake at 350 degrees F. for approximately 45 minutes.
